INGREDIENTS
- chickpeas 250 g
- large onion 1 pc.
- garlic 4 cloves
- lemon juice 2 tsp
- flour 2 tablespoons
- cilantro greens 2 bunches
- 2 bunches parsley
- ground cardamom 1 tsp
- coriander seeds 1 tsp
- zira 1 tsp
- sweet paprika 1 tsp
- sesame seeds 1 tbsp
- 1/2 tsp black pepper
- salt to taste
STEP-BY-STEP COOKING RECIPE
Step 1
Soak the chickpeas for at least 12 hours in cold water.
Step 2
Crush spices and salt in a mortar.
Step 3
Chop the onion and garlic in a blender.
Step 4
Grind the chickpeas in a blender to a fine fraction.
Step 5
Grind the herbs.
Step 6
Mix chickpeas, onions, garlic, herbs, spices, salt, sesame seeds and flour into a homogeneous mass. Add lemon juice.
Step 7
Form small washers from the mass (balls can be, but washers are more convenient to use).
Step 8
Fry in a large amount of oil on both sides until golden brown.
Step 9
Serve with sesame sauce, pomegranate seeds, or tuck the falafel into a warmed pita with vegetables and lettuce. Bon Appetit!
