We recommend using this recipe during zucchini season. A refreshing dish that can be prepared in nature or in the country.
- a couple of zucchini;
- 200 grams of cottage cheese;
- ripe avocado;
- half a lime;
- 3 cloves of garlic;
- 1 tablespoon olive or sunflower oil
- pepper and salt to taste;
- a sprig of parsley for decoration.
Zucchini are pre-cut lengthwise into thin slices and oiled. Next, they need to be fried on the grill or in a special grill pan for two minutes on each side.
Avocado must be peeled and pitted. Transfer the pulp to a blender, sprinkle with lime juice, and beat until smooth. If you don’t have a blender on hand, you can use a mortar. Cottage cheese must also be grated through a sieve and added to the avocado. Salt and pepper the mass and add the squeezed garlic. Mix everything well.
Distribute the resulting filling on zucchini slices, and gently roll each slice with a roll. Serve with parsley leaves.
